[蝦 類食譜]鎮江汁燒明蝦
鎮江汁燒明蝦材料 :450 克中蝦
4湯匙油
1湯匙生粉
2片薑(切片)
1粒蒜頭(切片)
2條乾荵(切片)
醃料 :1/2 茶匙鹽
1茶匙麻油
獻汁 : 2湯匙水
3/2 茶匙糖
1茶匙生抽
3湯匙鎮江醋
做法 :(1) 中蝦修剪好,拌入醃料。
(2) 燒熱四湯匙油,將生粉灑於蝦上拌勻,放入熱
油內煎至均勻金黃色取出。
(3) 剩下的油用來爆香乾荵、薑及蒜片,將蝦回鑊
並倒入獻汁炒勻即可。
Prawns with Spice Vinegar
Ingredients :450gPrawns
4 tbsp oil
1 tbsp cornstarch
2 slices ginger
2 pcs garlic (sliced)
2 pcs dried shallots (sliced)
Marinade : 1/2 tsp salt
1 tsp seasame oil
Sauce : 2 tbsp water
3/2 tsp sugar
1 tsp light soy sauce
3 tbsp spicy vinegar
Method : (1) Marinate prawns.
(2) Coat prawns in cornstarch. Heat wok in oil, add
prawns & cook until golden, set aside.
(3) Keep oil in wok, add dried shallots, ginger & garlic,
add prawns back into wok, add sauce, stir fry and
serve.
