威化紙蝦捲

菜名:威化紙蝦捲 Wafer Prawn Roll   


材料:   
中蝦 3 斤(4 lb prawns
芹菜 1 兩(1 1/3 oz chinese celery
竹筍片一罐(1 can bamboo shoots
威化紙一包(1 pkt wafer papers

(以上可供 40 人使用)

調味料:   
鹽 1 又 1/2 小匙(1 1/2 tsp salt
胡椒粉 1/2 小匙(1/2 tsp pepper
生粉 2 小匙(2 tsp corn starch

做法:

中蝦去腸去殼,洗淨,抹乾水份。Devine and shell prawns. Rinse and drain well.

芹菜、竹筍切絲,吸乾水份。Shred chinese celery and bamboo shoots. Squeeze out excess water.

將中蝦、芹菜、竹筍加入調味拌勻。Mix prawns, chinese celery and bamboo shoots together. Add seasoning and mex well.

每張威化紙放上蝦 1 隻、適量芹菜及竹筍妳,包成長方形,放在熱油中炸透。Put one prawn, some chinese celery and bamboo shoots on each peice of wafer paper. Wrap them into oblong shapes. Deep-fry in hot oil thoroughly.

補充:

  1/4 份量可做 6 人份。1/3 份量可做 12 人份。1/2 份量可做 24 人份。
