[蝦 類食譜]脆奶拼蝦仁
脆奶拼蝦仁材料 : 5兩蝦仁
1支鮮奶
8錢粟粉
2錢糖
1份脆漿
醃料 :蛋白及粟粉各少許
調味料 :鹽及酒各少許
做法 :(1) 鮮奶加入粟粉及糖拌勻,用鑊煮至起膠(期間不斷攪拌),盛入方
型盤內,待涼切件,沾上脆漿炸至金黃酥脆上碟。
(2) 蝦仁抹乾水份加入醃料拌勻,泡油撈起,瀝乾油份。
(3) 再燒熱少許油,將蝦仁回鑊,加入調味料兜炒數下即盛上碟中央,
炸鮮奶食時可以蘸砂糖伴食。
備註 :(1) 10 錢 = 1 兩 = 40 克
(2) 將鮮奶用煮的方法至起膠而非用蒸,能令鮮奶不鬆散,口感好。
Stir-fried Shrimps & Fried Fresh Milk
Ingredients: 200g Shelled shrimp
1 bottle of fresh milk
30g Cornflour
8g Sugar
1 portion of batter
Marinade : Some eggwithe & cornstarch
Seasonings : Some salt & wine
Method : (1) Blend fresh milk with sugar & cornstarch. Stir & cook it in a wok over mild
heat until it becomes sticky. Pour it into a square try. Leave it to cool & set,
then cut it into pieces. Coat it with batter & deep-fry until golden & drain the
fat. Dish up.
(2) Wipe dry shelled shrimp & put in marinade. Deep-fry briefly & drain the fat.
(3) Heat some oil, put in the shrimp & seasonings. Stir-fry & dish up at the centre
of the fried fresh milk.
